Homestyle Meatloaf

Makes 4 servings • Prep time: 15 minutes • Total time: 1 hour

1 small onion, coarsely chopped

1 rib celery, coarsely chopped

2 cloves garlic

1 pound 85% lean ground beef

1 large egg, lightly beaten

½ cup panko breadcrumbs

2 tablespoons milk

1 teaspoon salt

½ teaspoon freshly ground black pepper

2 tablespoons ketchup

1 tablespoon brown sugar

Nothing says comfort food like meatloaf, and this one fits the bill with a rich, sweet glaze of ketchup baked into the crust. Because the air fryer circulates hot air while it cooks, your meatloaf will be done a little faster than if you were to bake it in a conventional oven.

1. Preheat the air fryer to 350°F. Lightly coat an 8-inch round pan with olive oil and set aside.

2. In a food processor fitted with a metal blade, pulse the onion, celery, and garlic until finely chopped. Transfer the vegetables to a large mixing bowl.

3. Add the beef, egg, breadcrumbs, milk, salt, and pepper. Mix gently until thoroughly combined. Transfer the mixture to the prepared pan and shape into a loaf.

4. In a small bowl, stir together the ketchup and brown sugar. Pour the glaze over the meatloaf and spread evenly with the back of a spoon.

5. Air fry for 45 minutes or until the meatloaf is nicely browned and a meat thermometer inserted into the thickest part reaches 160°F. Remove from the air fryer and let rest for about 10 minutes before slicing.
